Where We Lead, They Follow

My daughter will be 8 soon. But like any young girl she thinks she is much older than her actual years. Have you ever watched your children? Have seen them watching you? They learn how to live, how to act, and how to treat others by watching us. They mould their choices by the choice we make. Where we lead, they follow.

My Daughter wants to learn how to ride horses, dance Ballet, swim, and Deadlift….she fights to go to any and all Crossfit workouts she can, because me and my Wife fight to get to any and all Crossfit workouts we can. We eat Paleo/Primal she eats the meats and veg we do, but we do not keep from her the small things that any 8-year-old would crave, Mac n Cheese, Pasta, Bread, Captain Crunch…you know, the fun stuff. She surprises us at every turn however and last week, she walked up to us, Paleo cookbooks in hand, and announced that these are the things she wanted to cook….

She often chooses the Primal option over the other options before her, she actually likes cauliflower “rice” and zucchini noodles instead of pasta. So today we spent most of the day knee-deep in this crazy Crossfit/Primal life. Crossfit Kids workout this morning after a great Paleo friendly breakfast, then some rest, kite flying, and prepping the melon and prosciutto that would be served alongside her Seafood Stew. Does she really understand why we eat the way we do? Why we push her to be active, have goals, and dreams? I am sure on some level she does, I mean she knows that eating your vegetables is healthy, she knows that exercise is good for you…

But in the end, I think it comes down to the simple fact that as her parents we try our best to make the best, healthy choices we can. It is important to us that we set a good example, and therefore she wants to follow the example we set, because…

So now, the good stuff…

Breakfast Burrito
Drom the Food Lovers Kitchen: Breakfast Burrito

  • 1 tsp coconut oil
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1/4 lb ground beef, pork or turkey
  • 1/8 cup red onion
  • 3 eggs
  • Brown meat over med heat, when almost cooked add spices and onions, when finished, set aside
  • whisk eggs, and pour into skillet with coconut oil over med-low heat.
  • cook slow, without flipping, until completely cooked
  • slide onto plate
  • wrap meat with egg “tortilla”

Prosciutto & Melon

  • 1/2 small Cantaloupe
  • 1/4 Lb prosciutto
  • Cut cantaloupe and scoop out melon balls
  • wrap in prosciutto
  • too easy, I know……yum!

Seafood Soup W/ Tomato Broth
Marks Daily Apple

  • 1 onion chopped
  • 1 small fennel bulb sliced thin
  • 4 cloves garlic, minced
  • 1 C white wine
  • 2 C chopped tomatoes
  • 2 1/2 c stock (fish, chicken, veg)
  • 1 lb mussels, cleaned
  • 1/2 clams, cleaned
  • 1 lb white fish of choice (or shrimp that is what we used today)
  • 1/2 scallops
  • salt / pepper to taste
  • saute onion and fennel until soft
  • add garlic, then wine, bring to boil, add tomatoes and stock, bring to boil, hold for 10 min
  • add seafood, cover and cook until mussels open (about 5 min)
Dark Chocolate Cake

From the Food Lovers Kitchen: Dark Chocolate Cake

  • 1 cup Coconut Oil, melted
  • 1 cup Maple Syrup
  • 1 Tbsp Pure Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Sea Salt
  • 1/4 cup Cocoa Powder, unsweetened
  • 10 whole Eggs
  • 3/4 cup Coconut Flour, sifted
  • Preheat oven to 300°F.
  • In a small bowl, combine sifted coconut flour, cocoa powder, salt, and baking soda.
  • In a large bowl mix eggs, vanilla, maple syrup, and melted coconut oil.
  • Add dry ingredients to wet and mix.
  • Grease medium cake pan, add mix to pan (we bake our cakes in Polish Pottery so things take longer)
  • Bake for 55 minutes.
  • Test center with a tooth pick—if the tooth pick comes out clean, then the cake is done.
  • Remove cake from oven and cool.
  • Cover with favorite frosting or topping (The Daughter likes non-Paleo store bought canned Chocolate Frosting, so that is what she got…She is 8…it’s ok people!)
