…All the Small things

So we start hoping that everyone had a great Fourth of July. For us, it was a much-needed break from the relentless stress. Good eats, good drinks, and great friends. I will really miss my friends that I have made over the last 4 years.

We have started making daily bike rides to my Daughter’s school where she attends day care, she loves it, and it is a great way to start the day.

So, in the next week or so they will take my computer away, so it seems that I need to learn how to post using my iPad, so that is what we are doing today, 100% iPad for this update, I am really wishing that I had remembered to charge the Bluetooth keyboard…but I guess I can drive on. For the record, autocorrect has a perverted sense of humour….

ok..several days later….no excuse, just been busy.

To the Foods (some have pics, some don’t)

Egg and Sausage Walk-Aways – (I used my new silicon square cupcake molds, they were fantastic, but I had to cut the sausage patties to fit the bottom)

  •  Turkey sausage patty (1 per walk away)
  • 6 eggs, beaten
  • Bell pepper diced any color
  • salt and pepper, to taste
  1. Pre heat oven to 350 / grease a muffin pan or silicon muffin molds
  2. brown sausage patties in skillet until just cooked, set aside to drain
  3. Sautee bell peppers in dripping for about 2-3 min to warm and slightly soften
  4. in a med bowl mix eggs – salt and pepper to taste
  5. trim sausage patties to fit muffin pan or molds – dice left over bits
  6. place a sausage in the bottom of each muffin cup
  7. add peppers and sausage bits to egg mixture and give a good mix
  8. pour egg mixture on top of each sausage patty in the muffin cups
  9. Bake for 15-20 or until egg is completely cooked.

Sweet Almond flour pancakes – (No picture for this one)

  • 2 eggs
  • 2 tbls coconut milk
  • 2 tbls Honey / agave
  • 2/3 C almond flour
  • 1/4 tsp baking soda
  1. Mix all ingredients in blender until well combined
  2. Cook on one side – flip – cook on the other side
  3. eat and enjoy

Baked Apple Pancake

Batter

  • 3 Eggs
  • 1/2 C Coconut milk
  • 1.5 Tbsp Coconut Oil, melted
  • 1 Tsp Vanilla
  • 1 Tsp Pure Maple Syrup
  • 1/8 C Coconut Flour
  • 1/4 Tsp Baking Soda
  • 1/8 Tsp Nutmeg
Spiced Apples
  • 1 Apple Diced
  • 1 tbsp Coconut Oil
  • 1 tbsp Raw Organic Honey
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1 tbsp Lemon juice
  1. Pre-heat Oven to 375 Degrees Fahrenheit
  2. In a large bowl, whisk eggs, coconut milk, coconut oil, vanilla, and Maple Syrup
  3. In a small bowl, stir coconut flour, nutmeg, and baking soda
  4. Mix dry ingredients into wet ingredients and beat well to combine
  5. In a small frying pan, heat 1 Tbsp coconut oil and raw organic honey
  6. Stir in cinnamon and nutmeg and lemon juice and cook for 1 minute
  7. Add in your apples and sauté until all your apples are nicely coated
  8. Evenly divide your apple mixture between muffin pan or cups greased with coconut oil
  9. Divide your egg mixture on top of the apples between muffin pan or cups
  10. Place your muffin pan in oven or cups on a baking sheet and then bake for 20 Minutes at 375
  11. Should pass the toothpick test, if not cook longer

Egg wrapped Bacon Burritos

This one is so simple it hurts!

  • 4-6 eggs
  • 1 LB Bacon
  • coconut milk
  1. Whisk eggs in a medium bowl
  2. add just enough coconut milk to get a nice thin egg mixture
  3. Fry bacon – ALL OF IT!!!
  4. Set large non-stick frying pan on med-low heat
  5. Pour egg mix into pan and swirl around until it is nice and thin
  6. cover and cook until edges just start to peel
  7. very carefully flip the egg over and cook the other side
  8. lay egg out on clean work surface, place a slice of bacon on it and fold
  9. add another slice of bacon and fold
  10. keep going until you run out egg or bacon
  11. I made 2 large egg wraps, and used about 1/2 the bacon. (my Daughter and I ate the rest while cooking)

    • What did you want to know about the pancakes. The almond flour ones are now my 2nd favorite (PaleOMG Brownie Batter ones still hold the top spot). We have started buying fresh ground almond meal that still has the skins on when they make it, it gives a “deeper” taste profile, and really works well if you add raisins.
